What to know before you choose
Bamboo is hard, and that cuts both ways: it resists knife marks well, but it is firmer on knife edges than softer woods like walnut. Like any wood, it needs hand washing and occasional oil; a bamboo board left soaking or run through a dishwasher will crack or split along the laminations.
